Josh eats 3/19 (J eats returns)

Hi I’m back. I fell of. Hard. That’s apart of the process I guess. If you’re interested in more of an explanation, check out this blog post. I gave up for a bit Moving on, I wanted to start off with something fun, but I couldn’t really think of somethings, so if you have any suggestions let me know in the comment section. Let’s get to the food. 

Breakfast

I’m not fasting anymore, yay! Breakfast this week, we’re gonna keep it light and simple.

Greek Yogurt, with either mixed nuts or berries, and oatmeal.

Watch the sugar with the oatmeal, that can turn a pretty nutritious meal into a dessert real quick . I’m gonna be adding some roasted almonds to both of mine.

Lunch

This week I’m in the mood for some Greek food.

We are making lemon chicken over a bed of rosemary brown rice with a side of roasted asparagus or broccoli or both it’s your food. I found this recipe that sounds great.

MID-Week change up

This a throw back to the first Josh eats! Jerk chicken over curry quinoa. Week meal prep idea 1/7 I’m not sure if I mentioned it last time, but I used jerk chicken seasoning mix from Fry’s or if your from Texas, Kroger. I added more spice, but that’s just me. img_1071

Dinner

 

Sweet potato soup

This is a recipe that honestly still in development, but I thought I would add it to this week’s meal prep because I actually like what I have so far…kinda.

For this soup you are going to need:

  • 2 medium size sweet potatoes
  • 1 cup of chicken stock, not broth.
  • Seasoning mix of your choice, I went with an Italian blend
  • Lime for garnish
  • Blender

That’s it. Cut the the sweet potato into chucks and throw into a pot of water and bring to a to a boil. Drain until when soft. In a blender, toss in potatoes, chicken stock, and seasonings. Blend until smooth. Keep tasting and adding stuff until you like the flavor. It’s really simple, I think the issue I was having was that I used broth and it tasted like baby food. The stock will provide a lighter flavor, I think. We’ll see.

I would served this with either a side of chicken breast or a side salad tossed in a lemon vinaigrette. I know people think of soup of as a meal, but nah. I can’t.
